Salmon with Dill, Lemon & Garlic Butter

I love salmon! It is very versatile and for those of you who might be a little intimidated by preparing fish, it is by far one of the easiest fish to cook up to hone your skills. This recipe can be served hot or cold and makes for a nice presentation for elegant buffets or for family style dinners.

To serve cold, accompany with chopped red onions, boiled eggs, horseradish and grainy brown mustard.

ingredients

1 wild-caught salmon filet
2 tablespoons olive oil
1 tablespoon unsalted butter
2 teaspoons fresh dill
2 large garlic cloves cut into very thin slivers
Juice of one large lemon
1/2 fresh lime
Kosher salt and coarse ground black pepper, to taste

instructions

Heat oven to 375 degrees. Place salmon on a large, oiled cookie baking pan. In a small sauce pan, melt butter. Add olive oil to butter. Add remaining ingredients and heat through. Coat salmon with butter mixture. Place in oven and bake until fish has just a hint of pink in very center. Remove from oven and allow to rest. Note* – fish will continue to cook once removed from oven so be careful not to overcook. Finish with a squeeze of fresh lime juice.
