Decadent Banana Walnut Bread

Summertime means as little time as possible spent in the kitchen over a hot oven. But it also means keeping delicious, healthy go-to’s for breakfast, snacks or, in this case, dessert, when that sweet tooth comes knocking. So if you can relate, you are going to love my recipe for Decadent Banana Walnut Bread. This recipe is chocked full of flavor with a bit of extras to keep even the most finicky eaters interested.

Here’s a tip. Bake up a few extra loaves to store in the freezer to get you through the summer. Your family will love you for this.

ingredients

1 1/4 cups unbleached all-purpose flour

1 teaspoon baking soda

1/2 teaspoon fine salt

2 large eggs, at room temperature

1/2 cup milk

1 teaspoon vanilla extract

1/2 cup unsalted butter, at room temperature, plus more for preparing the pan

1/2 cup brown sugar

1/2 cup organic sugar

3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)

1 cup toasted walnut pieces, chopped

instructions

Butter a large loaf pan. Set aside. Heat oven to 350-degrees.

Sift together flour, salt and baking soda in a medium bowl. In another bowl add eggs, vanilla and milk. Using a fork, mash bananas until well-blended. In a stand mixture, beat butter until fluffy. Add sugars and beat again. Add egg mixture to mixer and beat until just blended. Add bananas to mixer. Remove mixer bowl from stand and fold in flour mixture. Fold in toasted walnuts. Pour mixture into prepared loaf pan. Bake for 50-55 minutes, or until a toothpick inserted in middle comes out clean. Cool on a cooling rack for 10 minutes. Invert bread onto rack and cool completely before cutting.
