Farro with Apricots

One of my favorite recipes for a flavor-packed main or side dish, is my recipe for Farro with Curry and Apricots.

This is a good dish to make ahead and heat up just before serving.  Add a simple green salad, and dinner is served.

Ingredients

1 1/2 cup farro, cooked

1 medium sweet onion, chopped

2 cloves finely chopped fresh garlic

2/3 cup chopped dried or fresh apricots

2 teaspoons good curry powder

Kosher salt and coarse ground black pepper; to taste

1/2 cup coconut milk

2 tablespoons olive oil

Instructions

Add farro to 4 cups salted boiling water and cook until just tender.  Drain and set aside.  Heat a heavy saute pan and add olive oil.  Saute onion until translucent.  Add garlic and saute an additional 1 minute.  Add farro to pan.  Pour coconut milk over farro and stir to toss.  Add salt and pepper.  Cook on low heat for an additional 2 minutes, stirring constantly until heated through.  Add apricots and toss.  Serve. 

Serves 4-6

Tip: To save on your budget, purchase farro in bulk and by the pound.
