There are days when an old-fashioned breakfast is just what you need to get your day off to a good start. And if you ask most people what does a good breakfast look like, regardless of where they come from, I would venture to guess that one of the choices they would make, would most certainly be waffles.
Waffles have a way of warming the coddles of those empty spaces that are longing for a feeling of comfort and of home.
This recipe serves up the flavor of home with ingredients that don’t skimp on flavor and are good for you. Add to this a serving of fresh blueberries, peaches or strawberries and you are off to the races for a very good day.
ingredients
2 cups all-purpose unbleached flour
1 cup whole wheat flour or a combination of 1/2 cup brown rice flour and 1/2 cup oat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons organic sugar
4 tablespoons unsalted, melted butter
1 1/2 cup buttermilk
2 eggs, slightly beaten
instructions
Sift dry ingredients together in a large bowl. In a separate bowl, mix together buttermilk, eggs and butter. Add buttermilk mixture to flour and mix until just blended.
Lightly coat a hot waffle iron with oil. Add batter to waffle iron and bake until done.
Serve with warm maple syrup and fresh fruit.
