12 chicken legs, lower half removed
1 lemon, thinly sliced
1 medium yellow onion, thinly sliced
Kosher salt, to taste
Fresh coarse ground black pepper
6 cloves garlic, chopped
Fresh thyme
Juice from 1/2 lemon
Olive oil
Flour
instructions
Season chicken legs with salt and pepper. Dredge in flour; just enough to lightly coat chicken. Heat enough olive oil to cover the bottom of a shallow dutch oven. Add chicken legs and brown on both sides. Add onion and garlic to pan and cook until tender. Add lemon slices and thyme and juice from 1/2 lemon. Cover and bake in 300-degree oven until light gravy forms in bottom of pan. To serve, add fresh lemon slices and fresh parsley.
