Baby it’s cold outside and eating a plate of cold salad is perhaps the last thing on your mind. But, it’s January and you can’t ignore the fact that you still need to shed those extra holiday pounds, so what can one do? You can start by ladling up a big bowl of hearty and delicious soup. Soups are a delicious and easy way to “have your cake and eat it too”.
This recipe for my Hearty Tomato with Coconut Milk soup is low in calories, packed with lots of nutrition, satisfies even the biggest appetites and you can stay on the annual lose the weight wagon.
Ingredients
4 cups very ripe tomatoes, chopped
1/2 cup sun-dried tomatoes
5 tablespoons tomato paste
1 teaspoon honey
4 cloves garlic, finely chopped
10 cloves roasted garlic, mashed
1 medium yellow onion, chopped
1 tablespoon cumin
1 teaspoon each, oregano, basil, thyme
1 3/4 cups coconut milk
Olive oil
Instructions
Heat a heavy duty Dutch oven pot until hot. Add olive and onions. Saute onions until transluscent. Add raw garlic and saute an additional minute. Add tomato paste and allow to brown slightly. Add dried herbs and stir. Heat through. Add tomatoes, sun-dried tomatoes, roasted garlic, honey and cumin. Simmer for 5 minutes. Add coconut milk. Reduce heat and simmer on low for 15-20 minutes. If necessary, add a little water to reduce thickness. Serve.
