The Holiday Season is here again and this month the subject is giving...we love to receive gifts...especially this time of year, but this year lets be selfish and give our self a gift...the gift of healthy and nutritious eating. Lets start reading food labels and cutting back on the sodium, sugar and fats...lets cut back on the fast foods and the things we know are not good for us...lets make a resolution for the New Year to eat more fruits and vegetable, drink lots of water and cut back on the sodas.
This month my recipe is called a “No Bake Chocolate Oatmeal Cookie.”
Ingredients
- ½ cup butter (1stick)
- 2 cups sugar
- ½ cup milk
- 4 tablespoons baking chocolate (or 4 baking squares)
- 3 ½ cups quick oats (uncooked)
- 2 teaspoons vanilla extract
Here is where you can make this recipe your own, you can add:
2 spoons of peanut butter or 1 spoon of honey or ½ cup of coconut or ⅓ cup chopped walnuts.
Directions
- In a 4 quart saucepan add the first four ingredients. Bring to a boil and hold for 1 minute. Remove from heat.
- Stir in remaining ingredients and drop by tablespoon on waxed paper.
- Cool until set.
NOTE: You can use your judgment on the 2 cups of sugar. I don’t use that much. Also please have a parent assist with the cooking. When making cookies you can use the already prepared cookie dough, it’s a lot easier, however, the next time you buy some cookie dough...look and read the ingredients...there usually approximately 20 ingredients that I don’t know what they are and I can’t pronounce them either. Do you want some cookie dough that has a 6 month expiration date? Whatever happens to using old fashioned flour, butter, sugar, vanilla extract, etc?
