Children love ice cream! On a hot summer day, nothing brings a smile to a child’s eyes like a giant ice-cream cone; the kind that drips melting ice cream all over their arms and across the front of their nice clean clothes.

As everyone focuses on eating healthy, everything seems to be up for question as parents try to feed things to their children that are good for them.

A good way to keep your children’s diets stocked with good stuff is to make substitutions — of the good kind. Greek yogurt is one such substitution that is filled with all kinds of nutrients and with a few additions your kids will be none the wiser.

And to help out, I have put together a delicious recipe for yogurt sundae that is very similar to ice cream and it only takes a few minutes to put together. What is also nice about this recipe is you can let your little ones make their own.

As a side note, this is also a great recipe for a healthy breakfast for you; just skip freezing the yogurt and spoon it up right from the fridge.

Fruit & Yogurt Sundae

Sliced peaches, strawberries, nectarines
Blueberries & raspberries
1 cup Chobani Greek Yogurt
2 heaping tablespoons raspberry or lemon Monastery honey (or your favorite brand), softened to pouring consistency
Toasted coconut for topping or low-fat Kashi granola (or your favorite low-fat granola without high fructose corn syrup)

Technique:

In a small mixing bowl add yogurt and honey. Mix well. Cover bowl with plastic wrap and place in freezer until firm. When firm, remove from freezer and using an ice cream scoop, scoop up servings of yogurt into a large parfait serving bowl or parfait glass by layering with fruit, yogurt and topping with toasted coconut or granola. If you would like, drizzle a small amount of honey as a final touch, being careful not to use too much (remember, the idea is to cut down on sugar).

Good stuff!
