Carrot Pie
- 2 cups carrots boiled then puree in blender
- 1 cup half-and-half
- 1/2 stick melted butter
- 1/2 cup brown sugar
- 2 eggs
- 1/2 tsp ground nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/8 tsp ground ginger
- 1 tsp honey
- 1 pie crust

Blend carrots together place in a large bowl mix in additional ingredients. Fill pie crust.
Makes 1 knockout pie.
