Orange Cauliflower Mashed

Spring is a time for new life, growth and changes. It’s very refreshing to see the return of color on the trees and grass, and the budding of flowers. I want everyone to try one of my favorite colorful side dishes: “Cauliflower,” which is a great source of vitamin C. You can find orange and green cauliflower at places like Whole Foods, Central Market, farmers markets or specialty food stores. Using different color veggies and fruits is my sneaky way of getting my brothers to eat healthier. They like color on their plates.
Orange Cauliflower Mashed (Potatoes)
1 whole orange cauliflower
Boil cauliflower in large pot of salted water.
Cook until soft enough to put a fork through.
Drain and place in blender.
Blend on whip until consistency of mashed potatoes.
Salt and butter as desired.
(You may also use only half the cauliflower and equal potato.)
