Lemon-Lavender Cookies
The warm summer months call for something lite and refreshing with just a hint of savory and sweetness. One of my favorite summer desserts is lemon-lavender cookies served up with a scoop of sherbet or gelato. The flavors alone will cool you down. Enjoy!

Ingredients:
- 2 cups unbleached all-purpose flour
- 1 ½ sticks unsalted butter, cut into small pieces
- ½ cup raw sugar
- 1 teaspoon crushed fresh or dried lavender
- Zest from 1 lemon, finely grated
- 1 teaspoon fresh lemon juice
Technique
Add flour and butter in a large mixing bowl and blend together using your fingers until flour and butter are combined. Add and blend sugar into flour mixture, pressing through with your fingers. Add lemon juice, zest and lavender and blend well, forming a ball. Continue to work the dough until smooth throughout.
Dust a cutting board or counter surface with a little flour, but not too much. Roll out dough on the surface to about ¼ inch thickness, pressing together in the areas that separate. Cut out the dough using your favorite cookie cutter. Using a spatula, transfer to a cookie sheet that has been lightly buttered or lined with parchment paper. Place in preheated oven and bake for 8-10 minutes or until lightly browned around the edges. Remove from the oven and allow to rest for a couple of minutes on the cookie sheet. Using the spatula, transfer cookies to a cooling rack to cool.
