Hearty Chicken Stew with Cumin

The cold winter months usually has everyone craving comfort food. Typically when we think of comfort food however, we just imagine the pounds that come along with a lot of the traditional recipes.

One way to keep the calories at bay is to stay away from and eliminate the obvious fat and add flavor through unusual and flavorful spices and herbs.

In this month’s eat feature we will be cooking up a simple, but delectable chicken recipe that uses one of the cheaper parts of the chicken and the calories are very much on the good side. The addition of cumin makes this dish surprisingly flavorful and it because of its full flavor your appetite is easily satisfied. You can use your crock pot for this dish, but I prefer my trusty Dutch oven.

Preheat oven to 350-degrees. Remove lower portion of chicken legs with a meat cleaver. Remove skin and all visible fat. Place in a large Dutch oven. Add remaining ingredients. Cover with lid. Bake for about 1½ hours. Serve with a side of sautéed spinach.
