Mediterranean Baked Shrimp over Linguine

Preheat oven to 375 degrees. Peel and devein shrimp, leaving tail intact. Rinse to remove any remaining sand or vein. Heat olive oil in a sauté pan and add shrimp, sautéing until just pink. Do not overcook as shrimp will continue to cook in the oven.

Add marinara sauce to an oven-proof baking dish and line shrimp, tails up around the dish. Sprinkle cheeses over the top. Bake until sauce is bubbling throughout.

Meanwhile, cook linguine as per package instructions. Drain when done. Add linguine to serving plates and top with shrimp and sauce.
