GOOD 'N' CHEAP EATS
Basil Chicken with Sundried Tomatoes
Ingredients
- 1 fryer cut up
- 3 ounces basil pesto, packed in olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 dozen sundried tomatoes, diced
- Kosher or sea salt
- Fresh ground black pepper
Place all ingredients in crock pot and cook for at least 4 hours or place in heavy duty oven proof baking pan or pot and bake covered at 350-degrees until tender and juices have cooked down to a nice thick sauce.
Serve with brown rice or over pasta. Add a green salad or steamed green beans as a compliment.
Grilled Talapia with Black Rice
Ingredients
- 4 Talapia filets
- 2 cups black rice
- 8 ounces Portobello mushrooms, cleaned and diced
- 1 medium yellow onion, chopped
- 3-4 fresh minced garlic
- 6 cloves roasted garlic
- 4 cups chicken or vegetable stock
- Kosher of sea salt
- Herbs, basil, thyme and oregano
- Olive oil
Technique
Season Talapia with a little Kosher salt and black pepper and sear in a heavy cast iron skillet on one side. Turn to the other side and place in 375-degree preheated oven and finish cooking; about 5 minutes.
In a medium pot, add black rice and stock. Bring to a slow boil, lower heat and cook until rice and tender and no liquid remains.
Heat a little olive oil in sauté pan. Add onions and sauté until tender. Add mushrooms and cook until done and no longer mushy. Add garlic and continue to sauté for an additional 1-2 minutes. Add herbs to mixture and still until well-blended.
Spoon rice into onion mixture and mix together. Heat through. Serve with Talapia and green vegetable or salad.
