GOOD 'N' CHEAP EATS
Onion Tart
Savory tarts are the French way of eating elegantly on a paupers budget. And the nice thing is you can create almost any combination of vegetables, meats and cheeses that are sure to satisfy even the discriminating palate. Here is one of my staple favorites.
Ingredients:
- 1 nine-inch pie crust (see previous issue for recipe), baked blind in a tart pan
- 2 large sweet onions, sliced
- 4 cloves garlic, chopped finely
- 1 tablespoon honey
- 2 tablespoons extra-virgin olive oil
- Sea salt
- Coarsely ground black pepper
- ¼ teaspoon nutmeg
- ¼ teaspoon cayenne pepper
- 3 eggs, beaten
- 1/3 cup half and half
- 4 slices Swiss cheese, sliced into strips
Technique:
Heat olive oil in a large heavy-duty sauté pan. Add onions and caramelize. Add honey and continue cooking for another 2 minutes. Wrap tart pan with crust in heavy-duty aluminum foil. Place onions in bottom of cooked pie crust.
In a medium bowl, beat eggs until mixed well. Add sea salt, black pepper, cayenne pepper, nutmeg and half and half. Pour mixture over onions. Place strips of Swiss cheese across top in decorative pattern.
Bake in preheated 350-degree oven until filling is completely set; about 25 minutes. Remove from oven and set aside for 10 minutes before cutting.
