Chef Darian DavisGifts bring so much joy. However homemade gifts are extra special. This month selection is homemade jelly. It is a really excellent inexpensive gift to give during the holidays and everyone always appreciate a treat made with your own hands and given from the heart.
Quick Grape Jam
Ingredients:
3 cups bottled grape juice
1 package powered pectin
4 cups sugar
Directions:
Combine grape juice in large saucepan. Bring to a rolling boil. Stir in sugar and return to a rolling boil. Boil hard for 1 minute stirring constantly.
Remove from heat. Skim foam if necessary. Ladle hot jelly into hot jars, leaving ¼ inch headspace. Process 5 minutes in boiling water canner.
Really Quick Orange Marmalade
Ingredients:
1 large orange with a good quality peel.
1 cup white sugar (or splenda for a no-sugar diet).
Directions:
Wash orange well. Remove stem end if still attached and any blemishes. Cut in eights with a serrated knife and carefully remove all seeds. Process in food processor until must chunks and peel are fairly small and uniform. Add sugar and pulse to mix. Place mixture in an uncapped glass container and place in microwave. Cook on high for 2 minutes. Stir, and cook for another minute. Repeat four times.
