GOOD 'N' CHEAP EATS
Red Beans and Rice with Grilled Chicken/Apple Sausage
Ingredients:
- 2 cups cooked red beans
- 3 cups cooked brown rice
- 4 chicken/apple sausage
- 1 green bell pepper, chopped
- 1 medium yellow onion, chopped
- 1 can whole kernel corn or 2 ears fresh corn, kernels removed
- 3 cloves fresh garlic, minced
- 3 Tbsp. olive oil
- 1 can tomato paste
- 2 teaspoons chili powder
- Kosher Salt
- Coarse Ground black pepper
Technique:
Add olive oil to a hot heavy duty pot. Add onion and sauté until tender. Add green bell pepper and sauté for 2 minutes. Add garlic and sauté for an additional minute. Add an additional 1 tablespoon olive oil and tomato paste. Stir until it glistens. Add brown rice. Mix well. Add in corn and red beans. Mix well. Add seasonings and a little water. Heat through. Grill sausage until done. Remove from grill. Cut into slices and add to beans and rice mixture.
Serve with salsa and hot pepper sauce. How good is that...
