Kids love burgers! And if you doubt that for a moment, ask McDonald’s. The warm spring and summer months usually bring with it cravings for a nice juicy burger. This month’s eating recipe is healthier, tastier and more creative version of a long-time favorite. And if you decide not to fire up the outdoor grill, no need to worry. Your trusty iron skillet will work just fine.
Turkey Burger Pannini
Ingredients:
- 1 fresh ground turkey
- ¼ yellow onion, diced
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 4 slices Swiss cheese
- Fresh spinach leaves
- Olive oil, for coating the skillet
- Focaccio cut into 5" squares
- Spicy garlic mayonnaise (recipe follows)
Technique
Combine ground turkey, onion, salt and pepper in medium bowl. Shape into 4-6 burgers. Brush a hot grill with a little olive oil and add burgers onto the oiled surface.
Grill on one side until browned, turn over and continue cooking until no longer pink. Slice open foccacio squares with a knife. Add burgers, cheese and garlic sauce. Top with cheese and spinach leaves. Add to a heated panini griddle and cook until cheese melts. Halve and serve with apple raisin salad and baked potato chips.
Spicy Garlic Mayonnaise
Ingredients
- 4 tablespoons lite mayonnaise
- 1 teaspoon hot pepper sauce
- 2 cloves minced garlic
Technique
Combine all ingredients in a small bowl. Refrigerate until ready to use.
