Every now and then we all crave comfort food, but comfort food does not have to be unhealthy food. If you ask the average person what comes to mind when they think of good comfort food, at the top of the list is sure to be fried chicken.
In this month’s feature for eat is a recipe that I promise you will not leave you wanting for the original. It is crispy, very flavorful and you won’t be left feeling guilty. So put away the deep-fryer and let’s make dinner! How good is that...
How good is that...
Ingredients:
- 1 fryer chicken cut into parts or 8-10 pieces of your favorite chicken parts.
- 1 cup brown rice flour
- ½ cup whole wheat flour
- ½ cup all-purpose white flour
- 1 teaspoon red pepper flakes
- 1 teaspoon coarse ground black pepper
- 1 teaspoon paprika
- 2 teaspoons granulated garlic powder
- 2 teaspoons Kosher or sea salt
- 2 TBS. poultry seasoning
- Pam cooking spray, canola or olive oil
Technique
Preheat oven to 450 degrees. Next, remove all fat and skin from chicken and season with lots of granulated garlic. Place chicken in a large glass bowl and add butter milk and allow to rest covered in the refrigerator for about an hour or overnight.
In a large zip lock bag, add brown rice flour, whole wheat flour, all-purpose unbleached white flour, red pepper flakes, black pepper, paprika, garlic powder, sea salt and poultry seasoning. Close bag and shake to incorporate well. Add pieces of chicken and shake bag to completely coat the chicken.
Place a metal cookie cooling rack onto a large metal cookie sheet or sheet pan. Spray generously with a PAM Olive Oil Cooking Spray. Place the chicken pieces on to the cookie rack and completely coat the chicken with cooking spray.
Bake in oven for about 1 hour and 15 minutes or until chicken is crispy and brown or until dark pieces of chicken are no longer pink in the center. For extra flavor, serve with hot pepper sauce.
