Baby Spinach Salad with Apples and Strawberries
One great way to get yourself back on track after the holiday parties and family dinners is to indulge in tasty, hearty low calorie salads. Salads made with ingredients that are heavy on flavor and low on fat are a sure way to eat well without feeling deprived. Spinach salad is chocked with nutrition and when you add the sweetness of apple and strawberries with the savory, you cannot help but be satisfied. This is one of my favorite creations.
Ingredients:
For the base:
- 1 pound Fresh Baby Spinach
- 1 Fuji Apple, peeled and cut into chunks
- 6 Strawberries, sliced
- Large Grape Tomatoes, quartered
- 2 Boiled Eggs, yolks removed and sliced
- Baby Bella Mushrooms, sliced
- Toasted Pecans, rough cut
- Balsamic Vinaigrette
Technique:
Add baby spinach to a large shallow serving bowl. To this add apple, strawberries, tomatoes, mushrooms, egg whites and toasted pecans. Toss lightly. Toss in vinaigrette just prior to serving and top with coarse ground black pepper. If desired, add shavings of fresh parmesan cheese. How good is that...
