GOOD BITES
Mini Meat Loaves w/ Maple Sweet Potato Mash
Ingredients:
- 1 pound lean ground beef
- 1 small onion, chopped
- 2 cloves garlic, chopped finely
- ½ green bell pepper, chopped
- 2 tablespoons finely chopped sundried tomatoes
- 1 egg
- ½ cup Tomato Ketchup
- ½ cup parmesan cheese
- 2 slices whole grain bread, toasted and ground into bread crumbs
- Kosher Salt
- Fresh Ground Black Pepper
Technique:
Sauté onion in a little olive oil until caramelized. Add garlic and green bell pepper and cook until tender. Add sundried tomatoes. Remove from heat and cool completely. In a large bowl add ground beef, onion mixture, spices and bread crumbs. Add ketchup and mix well.
Spray a muffin tin with cooking spray and using an ice cream scooper add meat mixture. Top with a light coating of ketchup. Bake in a preheated 350-degree oven and bake for about 25 minutes or until done.
Allow to rest for at least 10 minutes before removing.
Maple Mashed Potatoes
Ingredients:
- 3 large sweet potatoes
- 6 tbsp maple syrup
- 2 tbsp Unsalted butter
Technique:
Peel and cut potatoes into large cubes. Place in a medium pot and add cold water, covering about an inch above potatoes. Boil until tender. Drain. Add butter, maple syrup and salt, to taste. Mash with a hand masher or use a hand-held immersion blender and mix until desired consistency.
