Turkey Burger Veggie Wraps
Ingredients:
- 1 pound fresh ground turkey
- 1 small red onion, chopped
- 1 garlic clove, peeled and crushed
- Tomato ketchup (without fructose corn syrup)
- Sea salt
- Fresh Ground Black Pepper
- Whole Grain Tortillas
- Fresh lettuce leaves
- Provolone cheese slices
- Dill pickle slices
- Grated carrots
- Fresh tomato slices
Technique:
In a medium bowl, add turkey, onion, garlic ¼ cup ketchup, salt and pepper to taste. Mix together well Shape turkey mixture into medium sized burgers and flatten. Grill or cook in the oven. When done, remove from oven and top each burger with one slice of cheese.
To make burgers place one burger on 1 heated large whole grain tortilla. Top with lettuce, tomato, grated carrots and dill pickles. Wrap sandwich by making a pouch. Cut each sandwich in half and serve with a side of mayonnaise, mustard and ketchup condiments.
Potato Wedges
Wash thoroughly 4 medium sweet potatoes. Par-boil potatoes in hot water for about 3 minutes. Remove from water and pat dry. Add to a glass bowl and toss with a little olive oil. Grill potatoes on each side until done, making sure to grill on low. Continue to turn until potatoes are evenly browned on both sides being careful not to burn. Remove from grill and sprinkle with a little salt and pepper.
