Nothing is better than a gathering of friends and family at my home. My family needs no particular reason to gather, it could be a birthday, holiday, or just to catch up. But one thing is for sure: absolutely no gathering is ever complete without delicious homemade food. This month I want to share a recipe I made twice trying to perfect it before the next gathering. You can make it in any pan you desire as well as muffins (though they cook quicker). I have tried several pans and they are all delicious.

Zuccini Bread Recipe
Ingredients:
- 1 cup vegetable oil
- 2 cups white or brown sugar
- 2 cups grated zucchini
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 3 tablespoons of maple syrup
- 3 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup chopped walnuts
Preparation:
Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans. Bake for 60 to 70 minutes, or until done.
