Hearty Lentil Soup With Chicken Sausage
Ingredients:
- 2 cups dried lentils, washed
- 2 carrots, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon each, dried basil, oregano
- ½ teaspoon dried thyme
- 3 chicken sausage links cut into 2 inch rounds
- 2 Tbs. Olive Oil
- Kosher or Sea Salt and Coarse-Ground Black Pepper to taste
- 5 cups water
Technique:
Heat a large heavy duty pot to hot. Add olive oil. To this add diced onion and sauté until transparent. Add carrots and sauté for about 1 minute. Add garlic and sauté an additional 1 minute. Add herbs and stir to incorporate. Add lentils and 5 cups water. Add salt and pepper to taste, about 1 teaspoon.
Bring lentils to a boil and reduce heat to low. Cook lentils until done and mixture begins to thicken. Add chicken sausage and cook until just done. Serve hot; top with a little basil pesto as a garnish if desired. How good is that...
