COOKING SCHOOL
This time of year it is definitely time to move out of dream mode and make that constant dream come to life. What I mean by that is a lot of us have been envisioning that summer body and active lifestyle we are going to have this summer. Well now is the time to make that dream a reality. April just sets the tone for everything to become fresh and new. What better way to give our bodies a much needed rest by lightening up our intake. Let’s take a couple of days a week and not have any meat. Instead let’s start eating an abundance of fresh vegetables and produce to clean our systems out. I want you guys to try one of my family’s favorite’s meals. We have this for dinner often it is filling and a breeze to make. The combination of these peppers is awesome and has a perfect rustic sweet flavor.
You will need: 1 large Baguette, 1 Red, Yellow and Orange pepper. 1 cup fresh Spinach leaves. Olive oil, garlic powder and sea salt to taste. And ¼ lb fresh Mozzarella.
Start out by roasting some red, orange and yellow peppers with a little sea salt and garlic to taste. Slice them any way you like thick, thin or chunky. Place your peppers in a non stick pan that can go in the oven. Douse the peppers with olive oil and bake for 35 minutes at 375 degrees.
Slice your baguette in half and toast it in the oven until it is lightly brown, I always add a bit of olive oil to my bread. (No need to cover it). Take it out and add the peppers and some fresh spinach leaves to the bread. Now some of you may want to add some fresh mozzarella on top of the vegetable and put it back in the oven for 5 more minutes until the cheese melts.
You will not believe there is no meat on this sandwich. And you will not feel the least bit deprived but actually very satisfied. And also remember you can leave off half of the bread and save calories by having an open face.
