Summer Pasta with Sundried Tomatoes
Ingredients:
- 1 box whole grain Penne Pasta
- 1 cup chopped sundried tomatoes, packed in oil
- 2 cups fresh spinach
- 6-8 cloves roasted garlic
- ½ large yellow onion, chopped
- ¾ cup freshly grated parmesan cheese
- Fresh basil, oregano & thyme, chopped
- Sea salt and fresh coarse ground black pepper
Technique:
Cook pasta in a large pot of salted boiling water according to package instructions. Drain. Add about 2 tablespoons to a hot sauté pan. Add onions, lower heat to medium and sauté until just tender. Add sundried tomatoes and herbs. Sauté for one additional minute. Add spinach; sauté until wilted. Add roasted garlic and toss. Add cooked pasta to a large shallow serving bowl and incorporate vegetable mixture. Add grated parmesan cheese, salt and pepper. Mix to incorporate.
Serve with a side salad and whole grain Italian bread spread with a mixture of olive oil and herbs.
