Italian Hot Dogs with Sweet Potato Chips
Having grown up in the south, when I first learned about Italian hot dogs I was a little reserved in my opinion. Besides, for southerners hot dogs mean a frankfurter on a soft white bun, sweet pickle relish and yellow mustard. And if you are a little adventurous, you can add a nice squirt of ketchup for extra flavor.
I was introduced to Italian hot dogs by my husband who grew up in the northeast and although I am not a beef or pork eater, this culinary delight can be enjoyed as a vegetarian dish and you will not miss the meat. I often make this at home for dinner with a side of sweet potato chips and it never fails to bring a smile on the faces of my family. I like it too because it is packed with nutrition, which is always a requirement. You can vary your selection of vegetables based upon what you like or what is available at the time. So pull out the Italian buns, you should never use a substitute, and let’s make Italian Hot Dogs. Oh, and for the chips, there are a few good and healthy brands on the market; just remember to read the labels and purchase the brand with good ingredients.
Ingredients:
- 6 Italian rolls
- 6 Kosher beef franks or Italian Turkey Sausage
- 1 large yellow onion, sliced
- 1 each, red and green bell pepper, cut into strips
- 6 small red potatoes, thinly sliced
- Baby Portobello mushrooms, sliced (optional)
- Brown or yellow mustard
- Organic Ketchup
- Jalapeno peppers, sliced (optional)
Technique:
Grill turkey sausage or franks until done and set aside. In a sauté pan, beginning with onions, sauté until slightly caramelized. Add green and yellow peppers and continue cooking until peppers are slightly tender. Add mushrooms and cook until tender. Heat up rolls.
To assemble, open rolls, add franks or sausage and top with vegetables. Add condiments and serve with a side of sweet potato chips. If you prefer no meat, build the sandwich leaving off the meat.
