"You can lead kids to vegetables, but you can’t make them eat it." Not so for Chef Connie Johnson and her students of the "Vegetable Time" program at Calvin Rodwell Elementary School in Baltimore. Vegetable Time was developed by Chef Connie to provide healthier lifestyle choices for children both at home and at school. Teaching kids to eat and cook healthy foods at a young age will help them develop healthy eating patterns for life, so my students have included a kid-friendly summer recipe with a variety of vegetables, using proteins that are naturally lower in calories and rich in vitamins and minerals. This delicious recipe will help your kids learn to love whole grains (most kids should be eating at least 6 ounces a day) — and it gets high marks from my students who prepared it. Grilled Chicken and Vegetables in a Whole Wheat Pita with Garlic Mayonnaise

Ingredients:

Technique:

Sauté vegetables; drain. Sauté chicken; drain. Combine and season with chicken rub and red pepper flakes. In a separate bowl, mix minced garlic and mayonnaise, slice pita bread and layer on mayonnaise. Stuff pita with mixed vegetables and chicken, then serve.
