Twice-Baked Potatoes with Ground Turkey

Scrub potatoes and wrap each individually in heavy duty aluminum foil. Bake until sharp knife inserts into center easily. Meanwhile, brown ground turkey in a hot skillet that has been coated with olive oil. Season ground turkey with salt, pepper and garlic powder to taste. Drain and set aside. Steam broccoli until just tender. Remove potatoes from oven and cut in half length wise. Scoop out potato from skin, being careful to leave skin intact and place in a small bowl.

Loosen potato pulp with a fork by tossingl. Return pulp to potato skins. Divide ground turkey between four potato skins topping potato pulp. Add broccoli to top of ground turkey. Sprinkle tops of each potato with white cheddar. Return to oven and bake until bubbly and hot.
