Boneless Chicken Thighs with Garlic, Mushrooms, and Black Olives
Ingredients:
- 8 boneless & skinless chicken thighs, all visible fat removed
- 1 pound portabello mushrooms, sliced
- 6 cloves garlic, chopped
- 1 large yellow onion, chopped
- ½ cup white wine
- 3/4 cup black olives, sliced
- Olive oil
- Kosher Salt
- Fresh ground black pepper
- Fresh thyme
Technique:
Heat a large Dutch oven to hot. Add 2 tablespoons olive oil. Add onion. Sauté until tender. Add mushrooms. Sauté an additional 1-2 minutes. Add garlic and sauté for 1 minute. Remove vegetable mixture from oven. Add 2 tablespoons olive oil to pan. Season chicken with salt and black pepper. Brown thighs on both sides. Add vegetable mixture back into oven with chicken and add white wine. Add fresh thyme and olives. Cover with lid. Place pot in preheated 350-degree oven and bake for 1 hour.
Serve over brown rice or serve with crispy roasted red potatoes.
