Sweet Potato Pudding
Thanksgiving and Christmas never appears in our home without this all-time family favorite. It is simple and delicious and can be made days ahead to cut down on all the work on Thanksgiving Day. This recipe can also be tweaked by adding other ingredients such as toasted pecans or pineapple to give it a different twist. Thanks to Joy of Cooking for this great recipe.
Ingredients:
- 4 pounds cooked sweet potatoes
- 6 large eggs
- 1 cup sugar
- 2 cups evaporated milk
- 1 stick butter, melted
- 6 teaspoons fresh strained lemon juice
- 3 teaspoons vanilla extract
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon kosher salt
Technique:
Place potatoes in a large electric mixing bowl and blend until completely mashed. Add butter, sugar and eggs. Mix. Add milk and spices, mixing well. Pour into a greased baking dish and bake in a preheated 400 degree oven for 20 minutes. Reduce heat and continue baking for an additional 20 minutes until a light crust forms on the top.
