CHEAP EATS
Crock Pot Chicken and Vegetables
Ingredients:
- 1 whole fryer chicken, cleaned
- 4 large carrots, cut into chunks
- 4 large red potatoes, quartered
- 1 medium yellow onion, cut into large chunks
- 1 stalk celery, chopped
- 2 bay leaves
- Kosher Salt
- Coarse ground black pepper
- Dried herbs, basil, thyme, oregano
- Granulated garlic
- ¼ cup chicken or vegetable stock
Technique:
Season chicken inside and out. Place chicken into a large crock pot. Distribute vegetables around chicken. Season vegetables with additional herbs. Pour stock into crock pot, making sure to pour around the chicken and vegetables to collect in the bottom of pot to avoid washing away seasoning. Set temperature to high and cook for 30 minutes. Reduce temperature to low and cook until done, up to 8 hours.
Serve with a side of fresh green salad, cooked kale or other greens to round out the meal.
