Mini Frittatas

There are many great ways to eat eggs and for kids the more creative you are the better your chances are for getting them to eat them. This month’s cooking school finds another use for the typical muffin tin. This recipe is not only easy but it makes kids think they are getting something extra special when served up with salsa and if you decide to serve it for dinner, chips are a nice addition too.
Ingredients:
- 1/3 cup chopped fresh spinach
- 2 small tomatoes, seeded and chopped
- 1 ½ TBS. grated parmesan cheese
- 12 eggs, beaten
- ½ TB. Salt and Pepper
Technique:
Preheat oven to 350 degrees. Spray muffin tin with nonstick vegetable spray. Whisk together ingredients in a large bowl. Pour egg mixture into tins, dividing evenly. Bake 15-17 minutes until fluffy and done.
Remove from the oven. Let cool and gently remove from tins to serve. Add salsa as a side and to serve as a dish for dinner, add your favorite tortilla chips.
