Brown Rice with Mushrooms and Spring Chives
Here is an expensive recipe to use the first shoots of chives. With the addition of mushrooms and brown rice, this recipe provides just the right amount of flavor and heartiness; perfect for a meatless dinner meal.
Ingredients:
- 2 cups long grain brown rice
- 3-4 tablespoons walnut or peanut oil
- 2 chives, chopped into 1 inch pieces
- 3 cloves garlic, minced
- 1 cup roasted almond slivers
- 2 tbsp. fresh cilantro
- 4 cups vegetable broth
- 1 small sweet yellow onion (Vidalia)
- Fresh ground black pepper and Kosher salt to taste
Technique:
Heat oil in a large sauté pan. Add onion, sauté until just tender. Add garlic and sauté for an additional 1 minute. Wash rice, rinsing 3 times. Add rice to pan and sauté. Add vegetable broth, salt and pepper; cover with tight-fitting lid and simmer until done. In the meantime, sauté sliced mushrooms in a little olive oil in a sauté pan and cook until just tender. Remove from heat. When rice is done, toss with a fork to separate. Toss in chopped cilantro and mushrooms. Stir in almonds and serve hot or room temperature.>
