Penne Pasta with Roasted Red Peppers and Garlic
Ingredients:
- 1 box whole grain penne pasta, cooked
- 3 red peppers, roasted and skin removed
- 2 bulbs roasted garlic
- 2 tbsp. good basil pesto
- 1 ½ tbsp. extra-virgin olive oil
- Coarse ground black pepper
- Kosher salt
- Fresh parmesan cheese
Technique:
Add olive oil to sauté pan heated to medium temperature. Chop roasted peppers into small pieces. Add to pan. Cut off the tip of garlic and squeeze garlic into pan with peppers. Sauté until well mixed. Remove from heat and a pesto, mixing until well-combined. Drain pasta and add to a large serving bowl. Add red pepper mixture and toss well. Top with black pepper and salt to taste. Add shavings of fresh parmesan cheese.
Caution: Pesto that is purchased should be checked to make sure it does not contain nuts if you or your child is allergic.
