Pasta with Roast Chicken & Pesto
Every mom’s or dad’s challenge each night is getting a good and healthy meal on the table in the shortest amount of time. This month’s recipe uses ready to eat chicken with the addition of homemade pasta. From start to finish, dinner on the table in just a little under 30 minutes. You gotta love this!
Ingredients:
- 1 Take-out chicken
- 1 box whole grain spaghetti
- 3 Tablespoons basil pesto
- 1 Tablespoon olive oil
- Fresh Parmesan Cheese
- 1 teaspoon kosher salt
Technique:
Cut chicken breasts into chunks and set aside. Add 1 tablespoon olive oil to sauté pan and heat. Add chicken and pesto and heat through.
Meanwhile, bring water to a boil in a large stock pot. Add spaghetti and cook according to package directions. Drain.
Add spaghetti to sauté pan containing the chicken and pesto. Toss until well-blended. Serve with topping of parmesan cheese and a side green salad.
