Grilled Chicken Breast with Vegetables
Ingredients:
- 3-4 four chicken breasts, skin and fat removed
- ⅓ cup olive oil
- 8 red potatoes
- Fresh carrots, broccoli, peas, garlic
- Lemon and lime juice
- Sea salt & coarse ground black pepper
- Mayonnaise — finely chopped sundried tomatoes + 2 tablespoons Dukes mayonnaise + ½ teaspoon crushed garlic
Technique:
Flatten chicken breasts by placing between sheets of plastic wrap and gently pounding. Season chicken with salt, pepper and some of the lemon and lime juice. Heat 1 tablespoons of the olive oil in a hot sauté pan and brown chicken on one side. Transfer pan to a preheated 350-degree oven and cook for until chicken is done, about 8 minutes. Remove chicken from oven and allow to rest in pan. In the meantime, add the remaining oil to a thick medium pot. Add garlic and sauté. Add remaining vegetables and sauté until just tender. Add remaining lemon and lime juice to vegetables. Stir. Cook for one minute.
To serve, add vegetables to a serving plate. Top with one chicken breast and finish with a dollop of mayonnaise. For extra flavor, add a spritz of lime juice.
