Grilled Chicken Sandwich on Fresh Ciabatta Roll
Ingredients:
- 1 Whole Chicken Breast
- 1 Clove Fresh Garlic, Crushed
- Chopped Fresh Herbs, oregano, basil & thyme
- Kosher or sea salt
- Coarse Ground Black Pepper
- Juice of 1 Lime
- Sundried Tomato Mayonnaise
- Olive Oil (2 tablespoons)
Technique:
Combine herbs, salt & pepper, lime juice, garlic and olive oil in a large zip lock bag. Remove skin and any visible fat from chicken breast and divide into 3 or 4 pieces depending on the size of the breast. Place each piece between sheets of plastic wrap and pound to flatten slightly. Add chicken pieces to bag with herb mixture; seal. Turn bag to mix herb mixture into chicken completely. Place chicken in refrigerator for at least 30 minutes to marinate.
Heat a grill to hot and brush with a little olive oil. Remove marinated chicken from zip lock bag, shaking off any excess liquid. Place on the hot grill and cook on one side until slightly browned. Turn over to the other side and cook until juices run clear, signaling that it is done.
Toast ciabatta roll. Spread the roll with sundried tomato mayonnaise. Add one chicken breast to each roll. Add fresh lettuce, tomatoes and dill pickle slices, if desired.
Serve with a side of stir-fry vegetables and sweet potato chips.
