Lobster Rolls with Sweet Potato Chips
Ingredients:
- 2 Live Maine Lobster, steamed and meat removed from shell, cut into small chunks
- 1/4 cup chopped celery
- 2 scallions, finely chopped
- 2-3 Tablespoons Duke’s Lite Mayonnaise
- Sea salt and fresh ground black pepper, to taste
- Lemon Juice from one large lemon
- 1 teaspoon fresh tarragon, chopped
- 1/8 teaspoon cayenne pepper
- Whole Wheat hot dog buns
- Organic Sweet Potato Chips
Technique:
Place all ingredients, except hot dog buns, in a large glass bowl and mix together to incorporate. Add additional mayonnaise, if necessary, just enough to bind.
Serve on hot dog buns with dill pickle slices and sweet potato chips. For a refreshing beverage, pour 6 tablespoons of peach syrup into a tall glass and add crushed ice. Add sparkling water to fill the glass. Stir with a long teaspoon to mix ingredients thoroughly.
