Steak with Bleu Cheese and Onions on Grilled Ciabatta Roll

Technique:

Using a very sharp knife, cut diagonal slits across the top of the steak.

Rub kosher salt into cuts in steak. Season steak with herbs and granulated garlic. Place Steak in a large zip lock bag and pour wine and olive oil over steak. Seal[ flip bag and place on a small cookie sheet. Store in refrigerator to marinate for at least 1 hour, or for better flavor, store over night.

After marinating, remove the steak from refrigerator and heat a large skillet to hot. Add 2 Tbs. olive oil to pan. Remove steak from bag, shaking off excess liquid from marinade and sear steak until brown on one side. Turn over and sear the other side. Place steak onto a cookie sheet. Rub steak with a mixture of 2 tbs. brown sugar and 1 teaspoon red cayenne pepper. Transfer steak onto a cookie sheet and place in a hot, 375-degree oven. Bake 10-15 minutes until desired doneness. Ideally, steak will be medium well, with just a little pink in the center. When done, remove from oven and allow to rest for 10 minutes.

Meanwhile grill sliced yellow onion in a little olive oil until slightly caramelized. Split ciabatta roll in half and toast both sides.

To make sandwich, layer thin slices of steak on one half of roll. Add onions and top with crumbled bleu cheese. Top with second half of roll. Place on a cookie sheet and transfer to oven to heat until cheese melts.

Remove from oven and cut sandwich in half. Serve with sweet potato or gold potato chips. How good is that...
