A Sweet Gift
I love to bake — breads, cookies, cakes and pies. If it can be mixed, shaped or cut, I will am willing to give it a try.
The holiday season is a perfect time to pull out your favorite baking recipe or search for new flavors to make your own.
In this issue of eat, I am sharing one of my favorite cookie bar recipes for the holiday season. These pecan bars are absolutely divine and you will want to share them as a part of your holiday cheer. And they are incredibly easy to make. On a skill level of 1-10 with 10 being the highest, the level of skill required is about a 3. The topping is a nice chewy caramel with a thin layer of crunchiness that is sure to satisfy any sweet tooth. It also packages up nicely for your gift-giving. A single batch will yield approximately 2 dozen bars.
Pecan Bars
Ingredients:
For the base:
- 1 cup all-purpose flour
- ½ cup firmly packed brown sugar
- ½ cup butter
Filling:
- ¼ cup flour
- ½ cup firmly packed brown sugar
- 2 eggs, slightly beaten
- ½ cup dark corn syrup
- 1 teaspoon vanilla
- ¼ teaspoon salt
- 1 ¼ cups chopped pecans
Technique:
For the base, add all ingredients to a food processor and pulse until mixture becomes like small peas. Add this mixture to an 8-inch square greased oven proof baking pan. Bake at 35 degrees for approximately 20 minutes. In the meantime, mix all ingredients together well for the filling. Pour this mixture over baked base, return to oven a bake an additional 25-30 minutes or until top is set. Cool on a wire rack.
Loosen and turn onto a cutting surface. Cut into bars.
