Whole Grain Linguine with Peanut Sauce

Ingredients:
- 1 box Barilla Whole Grain Linguine
- 2 stalks green onions, chopped
- 2 cloves garlic, minced
- 1 cup coconut milk
- Juice of one small lime, strained
- ½ cup Peanut Butter
- 2 teaspoons olive oil
- ½ cup chopped peanuts, for topping
Technique:
Add olive oil to a hot medium sauce pan. Add garlic and sauté for about 1 minute, being careful not to burn. Remove pan from the heat and add peanut butter and coconut milk, blending until smooth.
Meanwhile, cook pasta in a boiling hot water according to package directions. Do not overcook. Drain pasta and add to a large bowl. Pour peanut butter mixture over pasta and using a pair of tongs, toss until well blended. Add lime juice and green onions. Serve topping with peanuts for each serving.
